Cassandra's French Toast

Ingredients:
· 2 eggs
· 2 Tbsp milk of choice
· ½ tsp vanilla
· ¼ tsp almond extract
· ¼ tsp cinnamon
· Zest of ½ an orange
· 4 slices of bread*
· 1-3 Tbsp butter, for cooking
· Toppings of choice
*Any bread will work. For particularly amazing results, try slightly stale brioche, Challah, or Pugliese bread.
Directions:
1. Combine everything but the bread and toppings in a medium mixing bowl. Place near the stove so it’s ready when it’s time to dip the bread!
2. Heat a pan or skillet over medium-high heat. Put a pat of butter in the pan to melt. (It’s fine if the butter browns, but do not let it burn!)
3. Dip each slice of bread in the egg mixture, gently shake off any excess mixture, and carefully set it in the heated pan.
4. Fry 30 seconds to 2 minutes per side, depending on how hot your butter is, until French toast is golden brown and lightly crispy.
5. Remove from heat and serve with favorite toppings (warm syrup, cinnamon butter, fresh berries, or whipped cream are all highly recommended!) Pairs especially well with tropical mimosas or smoothies
